The role of livestock and meat consumption in impacting global nutrient cycles and pollution is a critical, but little known, environmental issue. Nutrient pollution is destabilizing ecosystems to a huge degree, ocean dead zones being the most dramatic and pervasive example. This paper highlights the role of dietary demand in causing global nutrient pollution.
